Sunchokes - A Delicious Addition to Your Menu
Also called Jerusalem Artichokes or Tobinambur, Sunchokes are a delicious ingredient that will surprise your guests. Once peeled they look like potatoes but they taste like the delicious bottoms of artichokes. They can be steamed whole until tender when pierced with a knife and then smashed with thyme and butter or peeled and sautéed in olive oil and garlic until golden brown. They make excellent cream soup or a smooth puree cooked with cream and a bay leaf.
I recently incorporated Sunchokes into a Chef’s Table menu with Seabass, citrus butter sauce and warm haricot vert salad and it was a big hit.
